Black Bean & Corn Quinoa Makes: 4 servings
(Simple & Delicious)
2 Tbsp. canola oil
1 medium onion, finely chopped
1 medium red sweet pepper, finely chopped
1 celery rib, finely chopped
2 tsp. chili powder
¼ tsp. salt
¼ tsp. pepper
2 cups vegetable stock
1 cup frozen corn
1 cup quinoa, rinsed
1 can (15 oz.) black beans, rinsed and drained
⅓ cup + 2 Tbsp. minced fresh cilantro, divided
In a large skillet, heat oil over medium-high heat. Add onion, red pepper, celery and seasonings; cook and stir for 5-7 minutes or until veggies are tender.
Stir in stock and corn; bring to a boil. Stir in quinoa. Reduce heat; simmer, covered for 12-15 minutes or until liquid is absorbed.
Add beans and ⅓ cup cilantro; heat through, stirring occasionally. Sprinkle with remaining cilantro.
