Herbed Potato Fans              Makes: 2 Servings

(Simple & Delicious)

2 medium baking potatoes

2 Tbsp. olive oil

1 tsp. white wine or chicken broth

¼ tsp. salt

Dash each of dried parsley flakes, thyme and rosemary, crushed

Dash pepper

Green onions and sour cream, optional

With a sharp knife, cut each potato into ½ inch slices, leaving slices attached at the bottom. Place on microwave safe plate.
Combine the oil, wine and seasonings. Drizzle over potatoes, microwave uncovered, on high for 8-12 minutes or until tender; turning once. Garnish with onions and sour cream.

Inner Chef Note: For a crispier potato; after they are cooked in the microwave, you can put in oven and broil until top is golden and crisp.
