Green Beans with Lemon and Capers

Green Beans with Lemon and Capers       Serves 8-12

I know that everyone loves green bean casserole during the holidays, but why not shake things up a bit and try this at your next pot luck or at home.


2 lb. green beans, trimmed

6 Tbsp. olive oil

4 Tbsp. capers, coarsely chopped

Juice and zest of 1 lemon

Salt and pepper to taste


1. In a large bowl; whisk together, oil, lemon juice, capers, salt and pepper and set aside.

2. Bring a large saucepan of salted water to a boil; add beans and cook until tender; about 3-5 minutes.

3. Using a slotted spoon; transfer green beans to a bowl of iced water (this will stop the cooking process). Drain beans and toss with vinaigrette; adjust the salt and pepper seasoning and then garnish with lemon zest.
