Carne Asada

Carne Asada

flour tortillas

2 lb. flat iron steak

Juice of 2 limes

Juice of ½ lemon

Juice of 1 orange

4 cloves garlic crushed

½ medium onion chopped

1 tsp. freshly ground black pepper

½ tsp. salt

1 tsp. cumin

Preparation:

Mix juices, garlic, onion, salt and pepper in a bowl. Add meat and marinate both sides. Cover and refrigerate, turning meat over occasionally. Let steak marinade for 6 to 8 hours. Preheat grill to medium-high. Remove meat from marinade, reserving marinade. Place meat on grill and salt. Turn steak once during cooking. Brush steak with remaining marinade. Cook 5-7 minutes per side. Remove from grill and let meat rest for 5 minutes. Cut into thin slices, then into pieces. Serve on flour tortillas with Pico de Gallo, guacamole, sour cream.

PICO de GALLO

Ingredients

3 large diced tomatoes

½ medium sized onion; diced

1/4 bunch of cilantro (use more or less depending on your taste)

Juice of half a lemon

½ tsp. minced garlic

1 tsp. of salt

Mix all ingredients in a chilled bowl right before service of Carne Asada.
