Oatmeal, White Chocolate and Craisin Cookies

Oatmeal White Chocolate & Craisin Cookies           Makes About 2 ½ dozen


2/3 cup unsalted butter, softened

2/3 cup brown sugar

2 large eggs

1 ½ cups instant oats

1 ½ cup flour

1 tsp. baking soda

½ tsp. salt

½ tsp. cinnamon *

1 tsp. milk (if needed)

1 cup Craisins

2/3 cup white chocolate chips


  1. Preheat oven to 375°.
  2. With an electric mixer; beat butter and brown sugar together in a medium mixing bowl until light and fluffy. Add eggs; one at a time, mixing well after each egg.
  3.  Combine oats, flour, baking soda, cinnamon and salt in a separate mixing bowl. Add to butter mixture a little at a time; mixing well after each addition. Stir in Craisins and white chocolate chips.
  4. Drop by rounded teaspoon full onto parchment lined cookie sheets. Bake for 8-10 minutes or until golden brown. Cool on wire rack.

Inner Chef Note: I love using Chinese Cinnamon with this recipe; the aroma and soothing taste really makes the cookie!
