Easy Chicken Quesadillas Makes: 2 Quesadillas
4 flour tortillas
1 cup leftover grilled or cooked chicken, cut into strips
Con Queso cheese, shredded (Mexican blend shredded cheese can also be used)
- Heat chicken in microwave until heated through.
- Heat large skillet on medium-high heat. Lay one tortilla shell on plate, sprinkle with cheese and then add chicken strips; leaving about ½ inch around edge of shell. Lay carefully in skillet and with a basting brush dipped in water; brush around edge of tortilla and then lay top tortilla shell on top and press together with spoon.
- Brown and then carefully flip to brown other side. When cheese is melted and sides are browned; slide onto serving plate and slice in half or in quarters and serve with sour cream and taco sauce.
