Turkey and Rice Soup Makes about: 10-12 cups soup
4 cups leftover turkey; shredded or cubed
2 cups turkey juices
4 cups chicken stock
1½ cups diced celery
1½ cups diced onion
1½ cups diced carrots
Uncooked wild rice to make 4 cups
Salt and white pepper
Water if needed
- In large stock pot, add veggies, turkey juices and stock. Simmer for 30 minutes. Add turkey. Simmer for 15 minutes. Add wild rice and cover; cooking until rice is almost done.
- Add seasoning and simmer for 30 minutes. Add water if needed.
- Salt to taste.
- Freeze what you do not use; in resealable plastic bags.
