Fresh Apples and Steel-Cut Oats

Fresh Apples & Steel-Cut Oats                  Servings: About 4

1 cup Steel-cut oats

4 cups water

1 large red apple

1 Tbsp. brown sugar

3 tsp. white sugar

¼ to ½ tsp. cinnamon

  1. In a medium saucepan, combine oats and water. Bring to a boil and simmer for about 20-30 minutes.
  2. While oats are cooking; peel and dice apple. In a small saucepan combine apples, sugars and cinnamon. Simmer on low, stirring often.
  3. When oats are done, spoon into serving bowl, spoon apple mixture over oats and stir.

Inner Chef Note: Two great things about steel-cut oats: they do not have that “gummy” texture that regular oatmeal has and you can make a batch on Monday morning and refrigerate the rest for a quick breakfast the rest of the week.
