Fiesta Broccoli, Rice and Beans                 Servings: 4

(Simple 1-2-3 One Dish)


2 cups frozen broccoli florets

2 Tbsp. water

2 cups uncooked instant rice

½ tsp. chili powder

1 can (14.5 oz.) black beans, rinsed and drained

1 cup salsa or picante sauce

¼ cup shredded Colby Jack or Cheddar cheese


  1. Place broccoli and water in medium microwavable dish. Cover loosely with plastic wrap; cook on HIGH 4-5 minutes or until crisp-tender.
  2. Cook rice according to package directions, adding chili powder to cooking water.
  3. Stir beans and salsa in to hot cooked rice. Top each serving of rice and beans with broccoli and cheese.
