Mom’s Pear Bread with a New Twist.

Mom’s Pear Bread (2 loaves)

3 eggs

1 ½ cup sugar

¾ cup vegetable oil

1 tsp. vanilla

3 cups all-purpose flour

2 tsp. baking powder

2 tsp. cinnamon

1 tsp. baking soda

1 tsp. salt

4 cups finely chopped and peeled pears

1 tsp. lemon juice

1 cup walnuts, chopped

Directions

Mix eggs, sugar, oil, and vanilla in large bowl.

In small bowl, combine flour, baking powder, baking soda, cinnamon and salt. Add to egg mixture.

Toss pears with lemon juice and add to mixture. Spoon into 2 greased loaf pans.

Bake at 350 degrees for 55-60 minutes or until toothpick inserted in center comes out clean.

Cool for 10 minutes before removing to wire rack.

Inner Chef Twist: 

I make one regular loaf and then I make mini loaves and top with  a streusel topping made of:

⅓ cup all-purpose flour

½ cup white sugar

¼ cup butter, cubed                                                                                      

1 ½ tsp. ground cinnamon

To Make Crumb Topping: Mix together ½ cup sugar, ⅓ cup flour, ¼ cup butter, and 1 ½ teaspoons cinnamon. Mix with fork, and sprinkle over mini breads before baking.
