Mrs. Anthony’s Sweet Sliced Pickles
(Mrs. Anthony was our neighbor for as long as I can remember while I was growing up.)
2 gallons cukes- 3-5 inches in length
14 small onions
4 large green peppers
¾ cup salt
Slice cukes into slices, do not peel. Slice onion likewise, cut peppers fine.
Mix salt through all three ingredients. Place a weighted lid on them. Let stand for 3 hours. Drain and add 10 cups sugar
1 Tbsp. turmeric
1 tsp. ground cloves
1 tsp. celery seed
¼ cup mustard seed
2 ½ qt. vinegar
Combine dry ingredients, add vinegar, and then prepared vegetables.
Place oven on low heat, heat thoroughly, but do not boil, stirring often,
Pack into jars and seal.
This makes a very crisp sliced pickle.
