(A recipe that my grandma made, my mom made, then I made…it’s delicious!)
1 lb. ground beef
1 medium onion, diced or roughly chopped
1-2 Tbsp. diced or grated garlic
1 (28oz.) can stewed tomatoes
1-2 cups tomato juice (more if you prefer)
1 can green beans, drained
1 can yellow beans, drained
1 can corn, drained
1 can peas, drained
2-3 stalks celery, diced
½ green pepper, diced
Salt and Pepper to taste
Seasoning salt to taste
- Brown ground beef in Dutch oven, drain.
- Add onion, garlic, celery, peppers and tomatoes. Mix well and simmer. When heated through, add canned vegetables, tomato juice, salt and pepper and seasoning salt.
- Bring to a boil, then simmer for 15 minutes or until celery and peppers are soft. Add more seasoning if needed.
Always better the next day and freezes well.
