Pecan Stuffed Strawberries
20 whole large strawberries
8 oz. cream cheese, softened
¼ cup powdered sugar
¼ tsp. vanilla or almond extract
⅔ cup chopped pecans or almonds ( I prefer pecans)
Cut a thin slice from the bottom of each berry, so that the berry stands up.
Place berries, cut side down, carefully cut berries into 4 wedges, cutting almost to bottom, but not through. Use X cut. Fan wedge slightly; set aside.
Beat cream cheese, sugar and extract until combined but still stiff.
Using a pastry bag, fill the berry with cream cheese. Sprinkle with chopped pecans.
