Cucumber Stuffed Cherry Tomatoes

Cucumber Stuffed Cherry Tomatoes       Yields: 2 dozen

(Taste these and you will not be able to stop at one!)


24 cherry tomatoes

1 package (3oz) cream cheese, softened

2 Tbsp. mayo

¼ cup chopped peeled cucumber

1 Tbsp. finely chopped green onion

2 tsp. minced fresh dill


Cut a thin slice off the top of each tomato. Scoop out and discard pulp; invert tomatoes onto paper towels to drain. In a small bowl, combine cream cheese and mayo until smooth; stir in cucumber, onion and dill. Spoon the mixture into tomatoes. Garnish with a little of the fresh dill. Refrigerate until serving.

Garnish with fresh dill.

Inner Chef Note: For easier filling of tomatoes: take a plastic bag, snip off small piece at end, spoon filling into the bag and then pipe into tomatoes.
