Blueberry Coffeecake

1 tsp. oil


1 stick butter

1 cup sugar

2 eggs

½ cup milk

2 ½ cups blueberries

2 cups flour

2 tsp. baking powder

½ tsp. salt

1 tsp.vanilla


  1. Pre-heat oven to 375 degrees. Grease and flour 9×13 inch baking dish. Set aside.
  2. In bowl, cream together butter and sugar. Beat in eggs. Add milk.
  3. In a small bowl, mash ½ cup blueberries then add to egg mixture. Add flour, baking powder, salt and vanilla. Mix well.
  4. Carefully stir in remaining blueberries. Pour into baking dish. Sprinkle with sugar. Bake 30 minutes or until firm.
