Salsa Burgers

Salsa Burgers                                     Topping for 6-8 Burgers

This is a very easy recipe and it is mostly play it by your taste buds.

Don’t forget to grill some fresh corn on the cob to go with these burgers!)

 

Ingredients

1 large onion (I prefer Vidalia), small chop

4-6 Roma tomatoes, small to medium chop

Fresh cilantro, rough chop (this is where your taste buds come in), as little or as much as you like

Salt and Pepper to taste

  1. Mix all ingredients together. Cover and chill for at least 15 minutes so that the tomatoes have time to release some of their juices.
  2. Top your burgers with this and if there are leftovers; see the recipe below.

*Add more salsa flavor to your burger by blending in diced cilantro and onion to the meat before shaping and grilling.

What to do with leftover salsa:

Depending on how much salsa you have left (grill some extra ears of corn for this one) you will need:

1 can Black beans; drain, rinse, drain

2 ears of grilled corn (carefully cut kernels off your grilled corn on the cob)

Leftover salsa

  1. Mix all of your ingredients together for a tasty Grilled Corn and Black Bean Salsa.

This makes about 4-6 cups when using all of the above salsa.
