PESTO CHICKEN ROLLS
Season and grill chicken cutlets. Brush lavash or any other wrap-type bread with pesto; layer with the chicken, sun-dried tomatoes and arugula; roll up and cut on the bias.
GRAPES AND CHEESE
Mix feta cubes and green grapes (or grape tomatoes or pieces of watermelon). Add mint, salt, pepper and olive oil. A tiny bit of chopped fresh basil is good, too.
1 tablespoon herb and garlic flavored cream cheese
1 multigrain bagel, split and toasted
2 thin slices Cheddar cheese
2 slices dill pickle
1/4 cup shredded carrot
1 leaf lettuce
Spread the cream cheese on the toasted bagel. Layer the Cheddar cheese, pickle slices, carrot, and lettuce onto one half of the bagel, then top with the remaining bagel half. Cut the sandwich in half and wrap with plastic wrap or aluminum foil. Place the sandwich in a lunch bag with an ice pack or in a cooler.
Slice cucumbers, onion (optional) and lay on bread or pitas spread with mayo. Flavored mayo works great with this. Salt and pepper if desired.
