Peanut and  Broccoli Slaw                                                            Serves: 12


1 pkg Broccoli slaw

½ cup red onion, chopped

1 cup peanuts (shelled and skinned) If small, leave whole: if large, coarsely chop

½ to 1 cup raisins


½ cup mayonnaise

2 Tbsp. lemon juice

2 Tbsp. rice wine vinegar

2 Tbsp. sugar

½ tps. salt

freshly ground pepper


In large bowl, mix together:

Broccoli slaw, red onions, peanuts and raisins

For Dressing:

  1. In a small mixing bowl, combine mayo, sugar and salt. Whisk until smooth.
  2. In a small bowl combine, lemon juice, vinegar. Slowly pour ( a thin stream)  lemon juice mixture into mayo mixture; lightly whisking as you pour. Do not over whisk or the mayo will break down and become like curdled milk. Toss dressing with salad ingredients.
  3. Cover salad with lid or plastic wrap and refrigerate for at least 2 hours. Toss a few times before serving. Serve as a side salad.
